The chapter in my career running golf tournaments on the PGA TOUR cultivated a skill-set applicable to facilitating loan closings. Conducting TOUR events and leading loan closings are very important to the people participating. While the number of people involved are vastly different, the skills and abilities required couldn’t be more similar.

I recently met with the Tarrant County Coroner. After a thorough autopsy of these cookies, she determined they will likely lead to my demise.
She said there’s worse ways to go — then asked me for the recipe!

Flour, All Purpose

Pecans, Rough Chop & Toasted
Shredded Coconut, Sweetened
Semi-Sweet Chocolate Chips
Milk Chocolate Chips
Peanut Butter Chips
Sea Salt, Flake (for finishing)
Directions

If you want to toast your pecans chop them up and throw them in a dry skillet over medium heat. Toast for 3-5 minutes, until fragrant. Don’t let them burn! Remove from heat and let cool while you make the dough.

In a large bowl or stand mixer, beat the butter and beef tallow until it is light and fluffy.

Add both sugars and beat well, scraping sides and bottom.

Add eggs and vanilla, beat well.

In a separate bowl, mix together the dry powder ingredients: Salt, baking powder, baking soda, cinnamon, flour. In small batches, add the mixed dry powder ingredients into the stand mixer. Slow the mixer speed while doing this.

Add the oats, Frosted Flakes, pecans, and coconut to the bowl. Mix in gently.

Add the peanut butter chips, milk chocolate chips and semi-sweet chocolate chips.

Mix until everything is incorporated. Don’t over mix, it will make your dough tough.

Chill the dough for at least 1 hr, or up to 24 hrs.

Preheat oven to 350 degrees F. Line a couple baking sheets with silicone baking mats or parchment paper.

Use a 1/4 cup measuring cup to scoop these onto the pan. Leave at least a couple inches in between each ball of dough on the baking sheets.

Bake at 350 for 12-14 minutes, until the cookies are golden on the edges and they are not too shiny in the middle. (A little shine is okay.)

Place the baked cookies on cooling racks. After about 5 minutes or while still slightly warm, finish the cookies by lightly sprinkling on sea salt flakes. Trust me, the salt with the sweet is a winner.
